Ingridients:
Brinjals\Eggplants (in thick slices) - 4 medium
Mustard seed - 1/4 tsp
Fennel Seed - 1/2 tsp
Oil - 1 tbsp + for frying brinjals
Tomatoes (chopped) - 1 cup
Ginger Garlic paste - 2 tsp
Spice:
Coriander powder- 2 tsp
Cumin powder - 1tsp
Red Pepper - 1/4 tsp
Turmeric - 1/4 tsp
Salt - 1 tsp
Method:
1. Fry brinjals in flat pan in batches in a single layer . Fry on both sides
2. Remove brinjals from the pan and keep aside.
3. Add Oils and fennel and mustard seed
4. When seed begin to pop , Add tomatoes, ginger garlic paste and spices and stir till tomato is done
5. Add fried brinjals and salt to the pan.
6. Cover and cook for a few minutes
7. Serve as side dish
